Tomato & Green Onion Scramble on Toast

  • 2 eggs
    ¼ cup diced tomato
    2 tbsp green onion, chopped
    Salt and pepper to taste
    1 slice bread, toasted
    Oil or butter

  • 8 eggs
    1 cup diced tomato
    ½ cup green onion, chopped
    Salt and pepper to taste
    4 slices bread, toasted
    Oil or butter

  •  Cutting board
    Knife
    Skillet
    Spatula

Instructions

  1. Heat oil in skillet. Sauté onion and tomato for two minutes.

  2. Add eggs, salt, and pepper.

  3. Stir in beans, tomatoes, and stock.

  4. Scramble until soft and fluffy.

  5. Adjust seasoning before serving on toast.
