Sausage Stuffed Zucchini

  • Zucchini

  • Oil

  • Chorizo or sausage

  • Green onions

  • Shredded cheese

  • Cilantro

  • Quinoa

  • 1 Zucchini 

    1 Tsp Oil

    2 Oz Chorizo or Sausage

    1/2 Green Onions

    1 Oz Cheese, shredded

    1/8 Cup Cilantro for Sprinkling, Optional

    Salt and Pepper

  • 4 Zucchini 

    3 Tsp Oil, divided

    6 Oz Chorizo or Sausage

    2 Green Onions

    3 Oz Cheese, shredded

    1/2 Cup Cilantro for Sprinkling, Optional

    Salt and Pepper

Instructions

  1. Preheat oven to 450 degrees, place a baking sheet in the oven while it heats.

  2. Prepare the zucchini. Cut each zucchini in half lengthwise. Using a spoon, gently scoop out the center flesh to create a shallow cavity.

  3. Lightly brush the cut sides with 1 teaspoon oil. Place zucchini halves cut sides down on the hot baking sheet, roast for 5 minutes to soften slightly.

  4. Cook the sausage. Heat 2 teaspoons olive oil in a large skillet over medium high heat. Add sausage, cook for 4 minutes, breaking it apart, until browned and cooked through. Drain excess fat.

  5. Stir in green onion and cooked quinoa (if using), mix well and remove from heat.

  6. Fill the zucchini. Remove zucchini from oven and turn cut side up. Divide sausage mixture evenly among the halves, top with shredded cheese. Return to the oven for 10 more minutes. Garnish with cilantro if desired.

  7. Serve and enjoy!!
