    1/4 cup water

    1/2 cup of beans

    1/2 and 1/8 teaspoon ground cumin

    1/2 and 1/8 teaspoon oregano

    1/2 and 1/8 teaspoon coriander

    1 1/4 teaspoons chili powder

    Salt and pepper to taste

    1 1/4 cups diced tomatoes

    1 1/4 cups tomato sauce

    1 1/4 cups water

    About 2 1/2 cups of beans

  • 3 cups seasonal vegetables

    3/4 teaspoon ground cumin

    3/4 teaspoon oregano

    3/4 teaspoon coriander

    1 1/2 teaspoons chili powder

    Salt and pepper to taste

    1 1/2 cups diced tomatoes

    1 1/2 cups tomato sauce

    1 1/2 cups water

    About 3 cups of beans

Instructions

  1. Sauté veggies in a large pot over medium heat until tender. Add spices.

  2. Combine tomato sauce and diced tomatoes with water. Add the already prepared beans (either canned or cooked dry beans) and bring to a simmer for 10 minutes, adding more water as needed if the chili gets too thick.

  3. Once the vegetables are soft, serve in bowls and top with cheese if you’d like.
