Chicken & Summer Squash Skillet

Ingredients

Chicken piece (breast, thigh, leg)

Yellow squash

Green onion

Rice

Serving Sizes

  •  4 oz cooked chicken, shredded
    ½ cup yellow squash, sliced
    ¼ cup green onion, chopped
    ½ cup cooked rice
    ¼ tsp basil or Italian seasoning
    Salt and pepper to taste
    Oil or butter

  •  1 lb cooked chicken, shredded
    2 cups yellow squash, sliced
    1 cup green onion, chopped
    2 cups cooked rice
    1 tsp basil or Italian seasoning
    Salt and pepper to taste
    Oil or butter

  • Cutting board
    Knife
    Skillet or pan
    Spoon

Instructions

  1. Heat oil in skillet to medium high. Sauté onion and squash with spices until fragrant.

  2. Add cooked chicken, rice, and seasoning.

  3. Stir in until hot.

  4. Taste and drizzle with butter (optional), adjust seasoning before serving.
