Egg Salad Lettuce Wrap

  • Seasonal veggies

  • 3 Hard Boiled Eggs

  • 2 Lettuce Leaves

  • 1/8 c. Mayo

  • Salt, pepper, Italian herbs

  • 3 Hard Boiled Eggs

    2 Lettuce Leaves

    1/8 c. Mayo

    .5 Tbs. Relish, optional

    Salt, pepper, Italian herbs to taste

  • 6 Hard Boiled Eggs

    4 Lettuce Leaves

    1/4 c. Mayo

    1 Tbs. Relish, optional

    Salt, pepper, Italian herbs to taste

  • 12 Hard Boiled Eggs

    8 Lettuce Leaves

    3/4 c. Mayo

    2 Tbs. Relish, optional

    Salt, pepper, Italian herbs to taste

Instructions

  1. Boil the eggs, peel and cut them up.

  2. Dice lettuce and tomatoes. Save big lettuce leaves for wrapping.

  3. Mix lettuce, tomatoes, and eggs. Season to taste with salt and pepper.

  4. Spoon onto lettuce leaves and roll like a burrito.

  5. Serve and Enjoy!!!!
