Instructions
Rinse rice thoroughly. To cook, take 2.5 times water and bring to a boil. Lower the heat to medium, add rice and cook till soft. Add water if needed.
In a pan heat oil, mix the veggies and sauté until veggies are cooked to desired tenderness.
Add chicken and mix well.
Serve the mixture on rice on a plate.
Top it with sour cream and cheese.

Vegan version: extra beans for proteins and skip the steps for sour cream and cheese.
