Chickpea Lemon Wrap

  • In your crate

    Jar of Chicken and Sausage (or Beans if you are Vegan/Vegetarian)

    Jar of Vegetables

    Bag of Rice

    Jar of stock, tomatoes, and spices

  • Recommended cooking utensils

    Big pot with lid

    Stirring spoon or spatula

Instructions

  1. Put about a tablespoon of oil in a large pot and heat on medium high.

  2. Add your vegetables, and cook for about 10 minutes, or until golden brown, stirring frequently. 

  3. Add the jar of meat (or beans for vegetarian folks), and cook for about a minute to mix with the vegetables.

  4. Add your jar of stock and spice mix and stir everything together. 

  5. Add 2/3 cup of water per serving (for example, if you have three servings, add 2 cups of water). 

  6. If the water is boiling, turn the heat down. You just want a gentle simmer so the stock doesn’t boil off too fast. 

  7. Now, add your rice.

  8. Cook for about 15-20 minutes with the lid on, until the rice is soft. Depending on how hot the stove is, you may need to add a little more water if the rice isn’t soft. 

  9. Once the rice is soft, turn off the heat, and enjoy! If you’d like a little more spice, you can add some red pepper flakes or cayenne pepper. If you’d like a little less spice you can add a little bit of butter or vinegar and mix.
