Healthy Avocado Salad

  • Ingredients for 4 Servings

    2 ripe avocados

    3 ripe tomatoes

    ½ sweet onion, sliced

    2 limes

    pinch of salt

    1 tablespoon olive oil

  • Directions

    1 Cut avocados in half lengthwise. Remove the pits and scoop out the flesh with a spoon.

    2 Cut into cubes and place in a large bowl. Add the sliced onion.

    3 Squeeze the lime juice evenly over the avocado mixture.

    4 Season with salt. Stir in olive oil and serve.

    5 Complete the meal with baked fish, roasted potatoes, and a glass of low-fat or fat-free milk.
