Savory Vegetable Soup

  • Ingredients for 4 Servings

    1 cup navy beans, cooked

    1 can (15 ounces) diced tomatoes, no salt added

    1 cup corn (fresh, frozen, canned)

    1 cup green beans, cut into -inch pieces

    ½ cup onion, chopped

    1 stalk celery, chopped

    ½ teaspoon dried basil or Italian seasoning

    ¼ teaspoon black pepper

    2 cups water

    1 cup whole-wheat elbow macaroni, cooked

  • Directions

    1 Place all ingredients except macaroni in a large pot and bring to a boil.

    2 Turn down heat, cover pot, and let simmer for 15 min.

    3 Stir in cooked macaroni and serve.
