Tangy Lentils and Rice

  • Ingredients for 4 Servings

    2 tablespoons olive oil

    2 tablespoons red wine vinegar

    1 tablespoon onion, finely chopped

    1 tablespoon brown mustard

    ½ teaspoon paprika

    ¼ teaspoon salt

    ¼ teaspoon pepper

    2 cups brown rice, cooked

    1 carrot, diced

  • Directions

    1 In a large bowl, whisk oil, vinegar, onion, mustard, paprika, salt, and pepper until blended.

    2 Stir in rice, lentils, and carrots. Mix well and serve.

    TIP: Complete meal with raw celery sticks and low-fat or fat-free milk.
