    1 small potato, diced
    ½ carrot, diced
    ¼ onion, chopped
    ¼ cup kale, chopped
    ¼ tsp Italian seasoning

    4 potatoes, diced
    2 carrots, diced
    1 onion, chopped
    1 cup kale, chopped
    1 tsp Italian seasoning
    Salt and pepper
    Oil or butter

  • Cutting board
    Knife
    Skillet or pan

Instructions

  1. Warm oil or butter in a skillet over medium-high heat. Add ground beef and cook until browned, breaking it into crumbles.

  2. Add onion, carrot, and potato. Sauté 6–8 minutes until vegetables begin to soften.

  3. Stir in kale, Italian seasoning, salt, and pepper. Reduce heat and cook 5–10 minutes more, until potatoes are tender.

  4. Taste and adjust seasoning. Serve warm as a simple harvest-style meal.
