4 oz ground or finely chopped meat
½ cup cooked rice
¼ onion, chopped
½ carrot, diced
¼ cup kale or other seasonal vegetables (such as squash, beets, or greens), chopped
¼ tsp Italian seasoning
¼ tsp onion powder
Splash coconut aminos or soy sauce (optional)
Salt and pepper to taste
1 tsp oil or butter for cooking - 
      
        
      
      
1 lb ground or finely chopped meat
2 cups cooked rice
1 onion, chopped
2 carrots, diced
1 cup chopped kale or other seasonal vegetables (such as squash, beets, or greens)
1 tsp Italian seasoning
1 tsp onion powder
Splash coconut aminos or soy sauce (optional)
Salt and pepper to taste

Instructions
Preheat oven to 375°F.
Heat oil or butter in a skillet over medium heat. Add ground or chopped meat and cook until browned and no longer pink.
Add onion, carrot, and chopped seasonal vegetables. Sauté for 5–7 minutes until softened and lightly golden.
Stir in cooked rice, Italian seasoning, onion powder, salt, and pepper. Add a splash of coconut aminos or soy sauce if desired for savory depth.
Transfer the mixture to a lightly oiled baking dish and spread evenly.
Bake uncovered for 20–25 minutes, until hot and slightly crisp around the edges. Let rest a few minutes before serving.
