  • 4 oz ground or finely chopped meat
    ½ cup cooked spaghetti noodles (or egg noodles)
    ¼ onion, chopped
    ½ carrot, julienned
    ¼ cup chopped kale or other greens
    ¼ tsp cumin
    ¼ tsp onion powder
    1 tsp oil or butter for cooking
    Splash coconut aminos or soy sauce (optional)
    Salt and pepper to taste

  • 1 lb ground or finely sliced beef or lamb
    2 cups cooked spaghetti noodles (or egg noodles)
    1 onion, chopped
    2 carrots, julienned
    1 cup chopped kale or other greens
    1 tsp cumin
    1 tsp onion powder
    2 tbsp oil or butter for cooking
    Splash coconut aminos or soy sauce (optional)
    Salt and pepper to taste

  • Cutting board
    Knife
    Large skillet or wok
    Tongs or spoon
    Medium pot for noodles

Instructions

  1. Bring a pot of salted water to a boil. Add noodles and cook until tender — about 8–10 minutes for spaghetti or 6–8 minutes for egg noodles. Drain and set aside.

  2. Warm oil or butter in a large skillet on medium-high heat, add meat and cook until browned and fully cooked through.

  3. Add onion, carrot, and kale (or seasonal greens). Stir-fry 5–7 minutes, until vegetables soften and edges begin to caramelize.

  4. Add cooked noodles to the pan. Season with cumin, onion powder, salt, and pepper. Add a splash of coconut aminos or soy sauce if desired, and toss everything together until evenly coated and glossy.

  5. Serve hot. Enjoy!!
