Roasted Tomato & Garlic Soup

Ingredients

Tomato (fresh)

Onion

Garlic

Basil (optional)

Serving Sizes

  • 1 medium tomato (or 1 cup cherry, chopped)
    ¼ small onion, chopped
    1 clove garlic
    ½ cup stock
    1 tsp oil
    Salt and pepper, to taste

  • 4 medium tomatoes (or 4 cups cherry, chopped)
    1 small onion, chopped
    4 cloves garlic
    2 cups stock
    4 tsp oil
    Salt and pepper, to taste

  • Cutting board
    Knife
    Baking sheet
    Blender or potato masher
    Pot
    Spoon

Instructions

  1. Preheat oven to 400°F. Place chopped tomatoes, onion, and garlic on a baking sheet with oil.

  2. Roast for 20–25 minutes, until softened and lightly browned.

  3. Transfer to a pot with stock. Blend or mash until smooth.

  4. Simmer for 5–10 minutes, season with salt and pepper, and serve hot.
