Chicken Tortilla Soup

Ingredients

Tomato (fresh or canned)

Onion

Garlic

Black beans

Bell pepper

Chicken

Serving Sizes

  • 2–3 oz chicken, cooked and shredded
    ¼ cup black beans
    ½ cup tomato (fresh or canned)
    2 tbsp onion, chopped
    1 clove garlic, minced
    2 tbsp bell pepper, chopped
    ¾ cup stock
    Spices to taste
    Tortilla chips, for serving

  • 8–12 oz chicken, cooked and shredded
    1 cup black beans

    2 cups tomato (fresh or canned)
    ½ cup onion, chopped
    4 cloves garlic, minced
    ½ cup bell pepper, chopped
    3 cups stock
    Spices to taste
    Tortilla chips, for serving

  • Cutting board
    Knife
    Pot
    Spoon
    Ladle

Instructions

  1. Heat oil in a pot over medium heat. Add onion, garlic, and peppers; sauté 3–4 minutes.

  2. Stir in tomatoes, beans, stock, and shredded chicken.

  3. Season with cumin, chili powder, or cayenne.

  4. Simmer for 20 minutes, then serve hot with tortilla chips.
