Savory Veggie Noodle Scramble

  • 1 cup cooked egg noodles
    1 egg
    ¼ cup chopped cabbage
    ½ carrot, diced
    ¼ onion, chopped
    ¼ cup kale or celery
    ¼ tsp Italian seasoning
    Salt and pepper
    Oil or butter

  • 4 cups cooked egg noodles
    4 eggs
    1 cup chopped cabbage
    2 carrots, diced
    1 onion, chopped
    1 cup kale or celery
    1 tsp Italian seasoning
    Salt and pepper
    Oil or butter

  • Cutting board
    Knife
    Skillet or pan
    Spoon

Instructions

  1. Heat oil or butter in a skillet over medium heat. Add onion, carrot, cabbage, and kale or celery. Sauté 4–5 minutes until the vegetables soften.

  2. Add cooked noodles and Italian seasoning; toss everything together until warmed through.

  3. Push the noodles aside and crack in the eggs. Scramble gently until just cooked, then fold into the noodle mixture.

  4. Season with salt and pepper. Serve warm.
