Honey Glazed Chicken & Pineapple Bake

Instructions

  1. Preheat oven to 375°F. Place chicken pieces, pineapple, onion, carrot, and kale on a baking sheet. Drizzle lightly with oil, sprinkle with oregano, salt, and pepper, and toss to coat.

  2. Roast 35–45 minutes, stirring once halfway through. The chicken should be golden and cooked through.

  3. Brush with a little honey or maple during the last 5 minutes if you want a glaze. Let rest a few minutes before serving.

  4. Serve warm with the roasted pineapple and vegetables.
