Kale

Instructions

  1. Warm oil or butter in a large pot over medium heat. Add onion and carrot; sauté 3–4 minutes until soft.

  2. Add chicken pieces and brown lightly on all sides. Pour in 1–2 cups of water, add Italian seasoning, salt, and pepper, and bring to a gentle simmer.

  3. Cover and cook 25–30 minutes until the chicken is tender. Stir in cooked wild rice and kale.

  4. Simmer 5 minutes more to blend everything together. Adjust seasoning as needed and serve warm.
