Chicken, Carrot & Wild Rice Country Stew

1 chicken thigh or leg
½ cup cooked wild rice
½ carrot, diced
¼ onion, chopped
¼ cup kale, chopped
¼ tsp Italian seasoning
Salt and pepper

4 chicken thighs or legs
2 cups cooked wild rice
2 carrots, diced
1 onion, chopped
1 cup kale, chopped
1 tsp Italian seasoning

Instructions
Warm oil or butter in a large pot over medium heat. Add onion and carrot; sauté 3–4 minutes until soft.
Add chicken pieces and brown lightly on all sides. Pour in 1–2 cups of water, add Italian seasoning, salt, and pepper, and bring to a gentle simmer.
Cover and cook 25–30 minutes until the chicken is tender. Stir in cooked wild rice and kale.
Simmer 5 minutes more to blend everything together. Adjust seasoning as needed and serve warm.
