Black Beans Rice

  • Seasonal veggies

  • Rice

  • Black beans soaked overnight and cooked

  • Onion

  • Spice Mix (chili powder, ground cumin)

  • Salt

    • 1 cup diced seasonal veggies

    • ½ cup rice

    • 1/3 cup dry black beans (soaked overnight)

    • ½ cup diced onion

    • Spice Mix (1/8 tsp chili powder, ¼ tsp ground cumin)

    • Salt

    • 2 cups diced seasonal veggies

    • 1 cup rice

    • 2/3 cup dry black beans (soaked overnight)

    • 1 cup diced onion

    • Spice Mix (1/4 tsp chili powder, ½ tsp ground cumin)

    • Salt

    • 4 cups diced seasonal veggies

    • 2 cups rice

    • 1 &1/3 cup dry black beans (soaked overnight)

    • 2 cups diced onion

    • Spice Mix (1/2 tsp chili powder, 1 tsp ground cumin)

    • Salt

Instructions

  1. Cook the soaked black beans in a pot by adding twice the amount of water. Beans should become soft.

  2. Dice the seasonal veggies into small cubes.

  3. Saute the veggies, add rice and mix.

  4. Add warm water, 2-3 cups for 1 cup of rice.

  5. Stir in cooked black beans, spice mix and salt to taste. Lid and let it cook till the beans are warm.

  6. Serve and Enjoy!!!!
