1 cup diced seasonal veggies
½ cup rice
1/3 cup dry black beans (soaked overnight)
½ cup diced onion
Spice Mix (1/8 tsp chili powder, ¼ tsp ground cumin)

2 cups diced seasonal veggies
1 cup rice
2/3 cup dry black beans (soaked overnight)
1 cup diced onion
Spice Mix (1/4 tsp chili powder, ½ tsp ground cumin)

4 cups diced seasonal veggies
2 cups rice
1 &1/3 cup dry black beans (soaked overnight)
2 cups diced onion
Spice Mix (1/2 tsp chili powder, 1 tsp ground cumin)

Instructions
Cook the soaked black beans in a pot by adding twice the amount of water. Beans should become soft.
Dice the seasonal veggies into small cubes.
Saute the veggies, add rice and mix.
Add warm water, 2-3 cups for 1 cup of rice.
Stir in cooked black beans, spice mix and salt to taste. Lid and let it cook till the beans are warm.
