    Black beans — 1/4 cup
    Onion — 1/4 cup chopped
    Tomato or pepper — 1/4 cup chopped
    Salsa — 2 tbsp

  • Eggs — 4
    Black beans — 1 cup
    Onion — 1 cup chopped
    Tomato or pepper — 1 cup chopped
    Salsa — 8 tbsp

  • Cutting board

    Knife

    Large skillet

    Whisk or fork

Instructions

  1. Cook rice

  2. Scramble eggs with onion and pepper

  3. Top rice with eggs, beans, and tomato

  4. Season to taste

  5. Top with salsa and serve
