  • Eggs — 2
    Onion — 1/4 cup chopped
    Bell pepper — 1/4 cup chopped
    Zucchini — 1/4 cup chopped
    Leafy greens — 1/4 cup chopped
    Herb or spice blend — 1/2 tsp

  • Eggs — 4
    Onion — 1 cup chopped
    Bell pepper — 1 cup chopped
    Zucchini — 1 cup chopped
    Leafy greens — 1 cup chopped
    Herb or spice blend — 2 tsp

  • Cutting board

    Knife

    Large skillet

    Whisk or fork

Instructions

  1. Beat eggs with herbs

  2. Sauté vegetables in oil

  3. Pour eggs over

  4. Cook on low until set

  5. Serve warm
