1 cup diced seasonal veggies
¼ cup diced onion
1/8 cup tomato Paste
1/3 cup rice
4 oz Chicken
1 tsp spice Mix (chili powder, garam masala)

2 cups diced seasonal veggies
½ cup diced onion
¼ cup tomato Paste
2/3 cup rice
8 oz Chicken
2 tsp spice Mix (chili powder, garam masala)

Instructions
Heat oil in a pan. Add onion, minced ginger, and garlic, and sauté till golden brown.
Add tomato puree. Sauté for another 2-3 minutes.
Add a tbsp little water at a time and sauté. Once the water has dried, repeat till the oil begins to separate.
Add chicken, stir, add water and let the chicken cook on medium heat.
Add curry powder and stir.
Cook rice. Top with curry. Enjoy!!!!
