Egg Roll Bowl

  • Garlic Cloves

  • Onion

  • Seasonal Veggies

  • Optional ground meat (beef, turkey, lamb)

  • Coconut amino, Sesame Oil (alternatively use soy sauce)

  • Seasoning (red pepper flakes, cilantro)

Ingredients

Serving Sizes

  • 2 tbsp Diced Onion

    1 clove Garlic Minced

    1.5 cups Seasonal Veggies Diced

    ¼ cup Protein (options: ground meat or tofu)

    Sauce (1 tbsp coconut amino, ½ tsp sesame oil, pinch red pepper flakes)

    Optional 1tbsp Fresh Cilantro Diced

    Salt and Pepper to taste

  • 4 tbsp Diced Onion

    2 clove Garlic Minced

    3 cups Seasonal Veggies Diced

    ½ cup Protein (options: ground meat or tofu)

    Sauce (2 tbsp coconut amino, 1 tsp sesame oil, pinch red pepper flakes)

    Optional 1tbsp Fresh Cilantro Diced

    Salt and Pepper to taste

Instructions

  1. Clean and chop all vegetables and mince garlic cloves.

  2. In a skillet, heat a little oil and saute the onion, garlic and any root veggies

  3. If using ground meat, add now and cook until browned. Drain excess fat.

  4. Stir in green and any other seasonal veggies. If using tofu, add it now. Cover and simmer for 5 minutes.

  5. Add sauce (coconut amino, sesame oil, red pepper flakes), salt and pepper. Mix well.

  6. Serve and enjoy!!
