1 cup diced seasonal veggies
¼ cup diced green onion
½ cup rice
5 oz water-packed tuna
1 egg
1 tbsp coconut amino or soy sauce

2 eggs
2 tbsp coconut amino or soy sauce

4 cups diced seasonal veggies
1 cup diced green onion
2 cups rice
Four 5 oz water-packed tuna
4 eggs
4 tbsp coconut amino or soy sauce

Instructions
Add warm water, 2-3 cups for 1 cup of rice.
Dice the seasonal veggies and green onions.
Whisk the eggs with a pinch of salt and pepper. Heat 1 tbsp oil in a pan. Cook the eggs until set (slightly undercooked) and remove from the pan.
Saute the veggies and cook for 2-3 minutes. Add cooked rice, drained tuna, coconut amino and mix.
Gently fold in scrambled eggs. Stir in the diced green onions.
