Garlic and Kale Fried Rice

Ingredients

Kale/cabbage

Carrot

Garlic

Onion

Rice

Serving Sizes

  • 1 cup cooked rice
    ¾ cup kale, chopped (massaged with a pinch of salt and oil)
    ½ clove garlic, minced
    ¼ onion, diced
    ½ carrot, diced
    ½ tsp butter or oil
    Soy sauce or salt to taste

  • 4 cups cooked rice
    3 cups kale, chopped (massaged with a pinch of salt and oil)
    2 cloves garlic, minced
    1 onion, diced
    2 carrots, diced
    2 tsp butter or oil
    Soy sauce or salt to taste

  • Cutting board
    Knife
    Skillet or pot with lid
    Spoon

Instructions

  1. Massage kale with a small drizzle of oil and a pinch of salt, set aside.

  2. Heat butter or oil in skillet. Add garlic, onion, and carrot, cook until softened.

  3. Add cooked rice and stir well.

  4. Place kale on top, cover, and let steam for 5–10 minutes.

  5. Uncover, fluff rice, mix in kale, season with soy sauce or salt, and serve.

  6. Enjoy!!
