Squash and Bean Chili

Ingredients

Winter squash

Carrot

Garlic

Onion

Beans (canned, drained)

Tomatoes (fresh or canned)

Serving Sizes

  • 1 cup winter squash, cubed
    ¼ onion, diced
    ½ clove garlic, minced
    ½ cup beans (canned, drained)
    ½ cup diced tomatoes (canned)
    ¾ cup stock or water
    1 tsp oil

  • 4 cups winter squash, cubed
    1 onion, diced
    2 cloves garlic, minced
    2 cups beans (canned, drained)
    1 can (14.5 oz) diced tomatoes
    3 cups stock or water
    1 tbsp oil
    Spices to taste (about 1 tbsp chili powder + 1 tbsp cumin)

  • Cutting board
    Knife
    Large pot
    Spoon

Instructions

  1. Heat oil in pot. Sauté onion and garlic with spices until fragrant.

  2. Add squash and cook 5 minutes.

  3. Stir in beans, tomatoes, and stock.

  4. Bring to a boil, then reduce heat. Simmer 20 minutes until squash is tender.

  5. Taste and adjust seasoning before serving.
