Lemon Chicken Pasta

  • Pasta

  • Garlic

  • Lemon juice

  • Seasonal Vegetables

    • Zucchini

    • Kale

    • Fresh Basil

  • Cooked Chicken or white beans

Ingredients

Serving Sizes

    • Cooked chicken (shredded) or white beans — 1/2 cup (3 oz chicken or 1 cup beans)

    • Pasta — 2 oz dry (about 1/2 cup)

    • Zucchini — 1/2 cup chopped

    • Kale — 1 cup chopped

    • Garlic — 1 clove minced

    • Lemon juice — 1 tbsp

    • Olive oil — 1 tsp

    • Fresh basil — 1 tbsp chopped

    • Cooked chicken — 6 oz (1 cup shredded) or white beans 1 cup

    • Pasta — 4 oz (1 cup dry

    • Zucchini — 1 cup chopped

    • Kale — 2 cups chopped

    • Garlic — 2 cloves minced

    • Lemon juice — 2 tbsp

    • Olive oil — 2 tsp

    • Fresh basil — 1/4 cup chopped

    • Italian seasoning — 1 tsp

  • Cutting board/knife

    Large skillet

    Large pot (to boil pasta)

Instructions

  1. Season the chicken with salt and pepper, and cook in a pan with oil over medium heat until it is cooked through.

  2. Cook pasta, drain the water and set it aside.

  3. Heat oil to medium in a skillet, toss in garlic, cook for 1 minute

  4. Toss in the rest of the chopped veggies, sauté until tender

  5. Add pasta and chicken or beans, season to taste, add lemon juice and basil.

  6. Serve and Enjoy!!!!
