Moroccan Chicken

 

  • 1/2 cup diced onion

  • 1/2 cup seasonal veggies

  • 5 oz chicken

  • 1/2 cup rice

  • Dressing: chopped cilantro (1 tsp), lemon juice (1 tsp), honey (1 tsp), olives (optional)

Instructions

  1. Cook the rice (rinse rice, add 2-3 times water, cook on medium heat till the water is absorbed)

  2. Dice the seasonal veggies like carrots, kohlrabi, and parsnips and onions and set aside.

  3. Season both sides of chicken pieces with salt and pepper.

  4. Heat oil in a pan on medium heat. Brown the chicken pieces until deep golden, then flip and brown the other side. Cook until the internal temperature is 165°F.

  5. In a deep pan heat oil and saute onion, when browned, add remaining veggies, little water and cook till desired tenderness.

  6. Add cooked chicken, dressing, and salt to taste. Mix well and cook for few more minutes.

  7. Serve the chicken with rice and Enjoy!!!!
