One Pot Greens and Beans

  1. Cooked beans (black or white)

  2. Onion

  3. Garlic

  4. Seasonal Vegetables

    1. Kale

    2. Green Beans

  5. Cooked chicken or beef (optional)

Ingredients

Serving Sizes

    • Kale — 1 cup chopped

    • Green beans — 1/2 cup chopped

    • Onion — 1/4 cup chopped

    • Garlic — 1 clove minced

    • Olive oil — 1 tsp

    • Cooked beans (black or white) — 1 cup

    • Water — 1/4 cup

    • Kale — 2 cups chopped

    • Green beans — 1 cup chopped

    • Onion — 1/2 cup chopped

    • Garlic — 2 cloves minced

    • Olive oil — 2 tsp

    • Cooked beans (black or white) — 2 cups

    • Water — 1/2 cup

  • Cutting board/knife

    Large pot

    Ladle

    Measuring cup

Instructions

  1. If using dried beans, soak them overnight and boil for 10 minutes.

  2. Get large pan on the stove.

  3. Chop vegetables into bite-sized pieces.

  4. Put a few tablespoons of oil in the pot and let heat up to medium

  5. Put in onions and garlic first, cook until tender, then add everything else and season to taste

  6. Cover the ingredients with water and let it get to a boil

  7. Turn to simmer and cook until greens are tender.
