½ small onion, finely diced
½ red pepper (optional)
¼ cup cilantro, chopped
1 cayenne pepper, minced (or a pinch for heat)
Juice of ½ lime (or splash of vinegar)
Salt to taste

Instructions
Combine chopped tomatoes, onion, pepper, and cilantro in a bowl.
Add cayenne, lime/vinegar, and salt.
Stir and let sit for 10 minutes before serving.
