Stuffed Pepper Skillet

Ingredients

Bell pepper

Tomato, fresh or paste

Onion

Garlic

Rice

Ground meat (optional)

Beans (Optional)

Serving Sizes

  • ½ bell pepper, chopped
    ¼ small onion, diced
    1 clove garlic, minced
    ½ cup chopped tomato (or diluted paste)
    ½ cup cooked rice
    2–3 oz ground meat or ¼ cup beans (optional)
    Salt and pepper, to taste

  • 2 bell peppers, chopped
    1 small onion, diced
    4 cloves garlic, minced
    2 cups chopped tomato (or diluted paste)
    2 cups cooked rice
    8–12 oz ground meat or 1 cup beans (optional)
    Salt and pepper, to taste

  • Cutting board
    Knife
    Skillet
    Spatula
    Spoon

Nutrition Facts
  1. Heat a skillet over medium heat with a little oil. Add onion and garlic; cook 2–3 minutes.

  2. Add ground meat (if using) and cook until browned, or warm beans.

  3. Stir in peppers, tomatoes, and cooked rice.

  4. Cook 8–10 minutes, stirring, until peppers are tender and flavors combine.
