Summer Salad

  • Lettuce

  • Cucumber

  • Tomato

  • Onion

  • Lemon juice

  • Wheatberries or Quinoa

  • Shredded cheese

  • Optional (olive oil)

Ingredients

Serving Sizes

  • 1 cup Lettuce Chopped

    1/3 cup Cucumber diced

    1/3 cup Tomato diced

    2 tbsp Onion diced

    1 tsp Lemon juice

    1/3 cup Wheatberries or Quinoa

    2 tbsp Shredded cheese

    Optional (olive oil)

    Salt and Pepper to taste

  • 2 cups Lettuce Chopped

    2/3 cup Cucumber diced

    2/3 cup Tomato diced

    4 tbsp Onion diced

    2 tsp Lemon juice

    2/3 cup Wheatberries or Quinoa

    4 tbsp Shredded cheese

    Optional (olive oil)

    Salt and Pepper to taste

Instructions

  1. Take 3 parts water and 1 part wheatberries or quinoa in a pot. Cook on medium heat till the water is absorbed. Spread in a bowl and let it cool.

  2. Chop lettuce, cucumber, tomato, and onion into bite-sized pieces and add to the bowl.

  3. Sprinkle cheese, oil, lemon juice, salt and pepper. Toss gently.

  4. Serve and enjoy!!
