Ingredients

1 cup Lettuce Chopped
1/3 cup Cucumber diced
1/3 cup Tomato diced
2 tbsp Onion diced
1 tsp Lemon juice
1/3 cup Wheatberries or Quinoa
2 tbsp Shredded cheese
Optional (olive oil)
Salt and Pepper to taste

2 cups Lettuce Chopped
2/3 cup Cucumber diced
2/3 cup Tomato diced
4 tbsp Onion diced
2 tsp Lemon juice
2/3 cup Wheatberries or Quinoa
4 tbsp Shredded cheese
Optional (olive oil)
Salt and Pepper to taste
Instructions
Take 3 parts water and 1 part wheatberries or quinoa in a pot. Cook on medium heat till the water is absorbed. Spread in a bowl and let it cool.
Chop lettuce, cucumber, tomato, and onion into bite-sized pieces and add to the bowl.
Sprinkle cheese, oil, lemon juice, salt and pepper. Toss gently.
Serve and enjoy!!
