Jar of enchilada sauce
Jar of green peppers and onions

Recommended cooking utensils

Skillet or Frying Pan for sauteing green peppers and onions

Large bowl to mix ingredients together for enchilada filling
Instructions
Preheat oven to 350 F. Grease baking pan, set aside until step four.
In the skillet, heat oil over med-high until hot, add jar of green pepper and onion and sauté for 5 minutes or until soft.
In large bowl combine veggies, chicken, black beans, and cheese (reserve some if you want it sprinkled on top before baking). Mix well until combined.
Place filling along the center of tortilla. Roll up and place seam-side down in baking pan.
Once pan is full of one layer or enchiladas, add sauce over top and sprinkle with reserved cheese if desired.
Bake for 30-35 mins.
Serve and enjoy! Top with sour cream if you’d like!
